Located on quaint Vashon Island, The Ruby Brink is a butcher shop, restaurant and cocktail bar serving up wholesome, locally-sourced dishes in a vintage setting. Lauren and her team are committed to sustainability and honoring the food they get from local farms. They use fresh, in-season produce from stalk to leaf — and animals from nose to tail — to reduce their footprint and show the world that sustainability in the restaurant business is possible. Lauren and Shawn enjoy a floral cocktail while they chat about how she became a butcher, her dedication to supporting local farmers and the unforeseen building hiccup that set them back an entire year.
