Anjore Austin is breaking down the barriers of traditional Indian food and blending it with an East Texas flare. Deepa Shridhar started Anjore Austin as a small catering company and has grown it from the ground up. Deepa Shridhar: I like to start with utter fear, and then go into utter fantasy about something that I read about or something that I’ve been thinking about. And, then the third part is basically what needs to be done. What needs to be done wins every day. What needs to be done is the master.
DS: We’re doing low country Indian Food. We take a lot of East Texas thought, we take a lot of Creole ideas, and just kind of marry it with Indian flavors.The non-traditional part of it is in Indian food and in Indian culture. We are separated by casts, and different cultures and different languages. There’s a way to prepare things, and there’s a way not to prepare things - we kind of just throw that out the door.
DS: This idea that a meal should be exciting throughout the meal is something I really gravitate towards, and that’s what I like to recreate. My business model is being able to do a fine dining experience while you only have enough money for a tent and a grill. I want to do anything and everything, and the hard truth about having a business is you do have to hone your ideas - which can be heartbreaking.
DS: The challenge of small business is the fact that you are constantly wondering, like Monday if you are gonna make it by Friday. Every week we’re still here, we still have a business, it’s like, that’s a huge accomplishment.
DS: I’m really, really lucky I have a really great support system. I also surround myself with a lot of really strong, incredible women that are making things happen.
